Tim finally got to meet the mouse..


My great parents decided to take us to Disneyworld for our 3 year anniversary. We left on Thursday afternoon ( We had a delayed flight thanks to the snow!) We got to the hotel, ate some pizza, then went to bed so we could be rested for our long weekend at Disney!!


Now you know something bad/funny always happens to me. This was 15% funny and 85% bad. I took off Thursday so I could get us packed and ready for our trip. I also wanted to get my toe nails painted just in case we got to wear flip flops. So I went to Walmart to get some snacks, went to the tanning bed, then went and got my feet done. I, of course, had to wear flip flops after I got my feet done so the paint wouldn't chip. So I finally made it home from my errands and when i was getting out of the car my foot slipped on my side step and since I was wearing flip flops I had NO traction and slipped down onto the concrete in my garage. I hit my back a few times on the step as I fell and hit the back of my left arm on something. So I was hurting BAD. I was determined to go to Disney so I sucked it up, took some Ibuprofen and was on my way. I was sore the whole trip. I dont have a visible bruise on my back but I know something is bruised! I also have a nice blue bruise the size of a golf ball on my arm.


Back to Disney-- It was great. Its best to stay about 5 days to see everything. We had to rush things but still got the see the main attractions. We decided the economy cant be too bad because Magic Kingdom was PACKED!! We have been saving for this trip and thats the only reason we could afford to go. We were amazed by all the people. Of course 1/2 of the people were from other countries but still!! It was a great trip and I am glad Tim got to finally go.


To end things let me tell you about the flight home last night.


We got to the airport alittle early so we decided to grab a drink and a bite to eat. We actually had time to have a couple drinks so by the time we got to board the plane I was feeling very good :) I was in a great mood and was ready for my flight. My dad also had some free drink passes so Tim and I were ready to continue celebrating our trip and then it happened... We heard the little girl behind me start crying and then I smelled throw up. This is BEFORE we even took off! She threw up all over herself and the seat. I went from being happy to being sick. I had to hold my jacket over my face. My mom and I were both about to throw up on the floor. We tried to turn on our air but it made the smell worse. IT was HORRIBLE. Needless to say I had no more drinks and had my jacket over my face the whole way home.

I did feel sorry for the little girl and I know it could happen to me when I have kids but it still didnt make the situation any better. I mean what are the chances they had to sit behind me!?


Oh well, good times were had by all.

A little something to warm you up...

Last night I came home from work and started getting everything ready for this meal. When Tim got home, he came in the kitchen and asked if he could help me. (He knew I had a headache so he wanted to help me. My sweet little husband) I needed milk for my muffins and my soup so I went to the fridge and prayed I had enough for the recipe. I had just enough! I put 1 cup in a container for Tim (the muffin man) and poured out 2 cups for me (soup lady). I was waiting for the soup to boil so I decided to help Tim with the muffins. I was stirring the dry ingredients then Tim asked me if I was ready for the egg/milk mixture. I looked up and thought MAN that looks like way more than 1 cup of milk. It was... Tim had poured the 1 cup plus my 2 cups of milk in with the 1 egg. All I could do was laugh. I was so grateful he was helping me so I wasnt going to be mean so I just laughed. He first tried to say I didnt explain things well enough (of course he would blame me, its a man thing) then I said it doesnt matter. Now put your shoes on and go get me some milk :) He had on shorts and his houseshoes but quickly got dressed and got me some milk. It was a long night, but we had a great dinner. It was also the first time I had ever made muffins (any bread for that matter) from scratch.

Ham and Potato Soup with Cheese Muffins
3 1/2 cups peeled and diced potatoes
1/3 cup diced celery
1/3 cup finely chopped onion
3/4 cup diced cooked ham
3 cups chicken broth
1/2 teaspoon salt

1 teaspoon ground white or black pepper
5 tablespoons butter
5 tablespoons all-purpose flour
2 cups milk


Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.
In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes.
Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.

NOTE: I browned the onion and ham first, but it tastes fine if you dont do this.
I made it with Italian sausage last night and it was very good!!

Cheese Muffins-- This is from one of my Paula Deen cookbooks.
2 cups all-purpose flour
1 tbsp sugar
2 1/2 tsp baking powder
1/2 teaspoon salt
1 egg, lightly beaten
1 cup milk
1/4 cup butter or margarine, melted (1/2 stick)
3 cups shredded Cheddar cheese (its best to grate it yourself but its fine to buy it already shredded)


Sift together the flour, sugar, baking powder and salt ( just put it in a strainer you drain noodles with and shake it into a bowl. I guess this makes it fluffier or something. dont really know the reason for sifting) Now add cheese and make sure all pieces are covered with the flour mixture. In a separate bowl lightly beat the egg then add the milk. Mix together then add to the dry ingredients. Then add butter.
Now scoop the mixture into muffin cups and bake in a preheated 350 oven for 15-20 minutes. Let them cool for about 20 minutes. If you try to eat them too quick they stick to the cups.

I should have tried out for American Idol...


Last night I got to go see Carrie Underwood in concert. She is really awesome. I know she thanks her lucky stars she decided to try out for American Idol. Little Big Town opened for her. If you are not familiar with them, look them up. They are one of my favorite groups.


Back to American Idol... when I was little I always wanted to be a singer. I might have been horrible in some eyes, but I thought I was fantastic. I knew 100% I would be on a stage one day. I think the only talent show we had when we were little was Star Search and of course my parents would have never flown me somewhere to try out for a show. Now American Idol comes to almost every city so it is very easy to try out. I wonder if I would have actually tried out if things were like they are now. I will have to send everyone a picture of me in my singing days. I think I would have definitley got to go to Hollywood because you cant turn down a chunky girl with glasses that made her eyes bigger than her head.

I guess the dream is long gone.


Back to the concert... Now you know something embarrassing happened at the concert. I made the mistake of drinking a beer (they are $9.00 by the way!) when we got to the concert so I had to use the bathroom ALOT. Let me add we were in the middle of the row so we had to bother like 8 people including a pregnant girl and her baby daddy (who knew EVERY word to all of Carrie's songs, he is her #1 fan i do believe.) I made my brother go with me to the bathroom so after we got past our row we made it down to the bathroom. I got in and out, then went to the concession stand to get Tim a beer. I was standing in line when a girl came up to me. I thought she was about to compliment me on my new pink jacket I just bought. NOPE, she got in my ear and said TOILET PAPER. I looked down and there it was...... not only did I have toilet paper on my boot, but I guess it was still connected to the roll in the bathroom because I couldnt see where it ended! I could have easily wrapped someone up like a mummy with all the toilet paper I had dragged out of the bathroom. I quickly got it off but then started laughing so hard i was crying. I tried to yell at Jeff for not telling me but I couldnt quit laughing so then Jeff was now laughing uncontrollably. (maybe it helped we had had 2 $9.00 beers, haha) The last funny part was when I went to order tim's stuff. I was still laughing and had tears rolling down my face. I ordered and the lady said "It's ok honey, I love Carrie too." I guess she thought I was crying because I am obsessed with Carrie. I didnt care because this meant she didnt see the roll of toilet paper I had brought with me to the stand. So that was my night. I sang, I laughed, I embarrassed myself and then I went home. It was a good night.

Football snacks!!


Bean Dip
1 can refried beans
1 package Hidden Valley Ranch Seasoning- FIESTA- only at WALMART
1 small can diced jalapenos
2 cups mexican shredded cheese (any shredded cheese you have on hand)
1 16 oz sour cream
Mix together beans, seasoning packet, jalapenos, sour cream and 1 cup cheese. Put in the microwave for 3 minutes. Stir then put back in the microwave for 2 more minutes. Top with the remaining cup of cheese.
Serve with frito scoops.
Optional-- top with green onion and baby tomatoes...

This is so addicting and great to take to parties. Easy and cheap.

Pizza Dip
1 small container onion and chive cream cheese
1 small can/jar pizza sauce
15 pepperonis
1 cup cubed ham
1 cup mozzarella cheese
11/2 tsp Italian seasoning
1 tsp oregano

Layer all ingredients in a pie pan in the order it is listed. Bake in a preheated 350 oven for 15 minutes or until cheese is bubbly. Serve with Garlic and Parmesean Italian toast (It is like pita chips, which will work too!)


I am a cooking machine


I love to cook. LOVE IT. It is my hobby.I wish I could find a job where I could cook families dinner everyday. (If you find me this family let me know please so I can quit work) Right now I am trying to conquer all the recipes I thought I would never be able to do. My mom is a master baker. I always told her I would never follow in her footsteps. Years later here I am. I have started writing a recipe book. It is just a book filled with my favorite recipes. If you ever need a new/quick recipe please email me anytime and I will send you something everyone will love. I dont like recipes with too many ingredients so dont worry about long drawn out ingredients and directions. Also if you have a recipe you love, PLEASE send it to me. I will post some recipes for everyone.

Meet my Vagina


I hope this makes you laugh!
This by far is one of the most humiliating things that has ever happened to me.If you ask me it should be ranked the funniest story of all times.It's too bad it is a real story and real people's lives were affected. haha.
So every girl loves going to gyno. There is nothing like getting butt naked on a table and letting a doctor you dont know feel you up and place random objects in your va-JJ. So here is my story....
Going to the gyno was a family affair. My mom, aunt and I would get up early for gyno day, wash our parts real good, shave our legs and get somewhat dressed up. Yes, dressed up. I dont like to get dressed up and for some reason my mom thought it was necessary to look nice to go to the gyno. So off we go to our special place. My gyno was an old man (dont say ew gross) I loved him. He was hilarious and had some very interesting things to chat about while he examined my hoohoo. I think I was probably 17-18 on this particular special day.

I got into my paper towel that my arms went through, left my socks on, and laid on the table. So my doctor came in and asked me how I was. I think this was my 3rd trip to the gyno so I was still scared and embarrassed to be there. My mom always tried to comfort me by saying he looks at 100 little girl's a day. (Little girl and little boy was the term my parents taught us to describe our private parts.)I told him I was okay and it all began. He checked my boobs, they were good, then on to my business. The conversation that day was about my belly button ring. He said next time I came in I better not have a tongue ring because you know what they say girls get those for. Yes he was a pervert but he was funny and you need funny when you are at the gyno. So minutes later the exam was done. THANK GOODNESS.

Now let me set up the room for you right quick. The table I was on was facing the door. So my Dr. said, "It's done blah blah..." and was getting ready to leave the room so I could get back into my dressup clothes. The nurse opened the door and my Dr was getting up to leave when the unexpected happened... He got up and somehow had the sheet tucked in his belt. I was still in position exposing my vagina to the world but now with the door to the hallway open. I let out alittle shrek and he said oh no. Then he tried to toss the sheet back on me and he missed. I wasnt really sure what to do at this moment. My naked body (well i did have socks on :)) was showing to the world. So I put one hand over my boobs and put one hand over my stuff. It didnt work well. To top it all off my mom was walking in the hallway and said JENNY??(Part of me wishes she had a camera to take a picture of my face) it was like she thought I did it on purpose and wanted to expose my naked body to the world.Finally the door shut, I was still covering what I could with my hands and I got my clothes on. I dont think a lot of people saw my naked body but it was traumatic.

My dr apologized over and over and said he understood if I never came back. I did go back the next year but made sure to hold on to the sheets for safety reasons. He made sure they werent tucked in his pants. Its looks like we both learned something.

A little advice to everyone: make sure you take hold of the sheet covering your precious privates.

I love Tim and safety glasses

I have been married to Tim for 3 years now. We actually met in 2004 at Nissan. Here is our story. I graduated from MTSU in August 2004 on a Saturday. I got a job at Ajax Turner(Budweiser) and I started on Monday. So.. I worked there for a couple weeks and had to quit. I should have known the job was going to be hard when they offered me 56,000 starting salary. That should have been my first clue. Let me also add I also bought my first house in August and had one of those things called a HOUSE payment. I had never had to pay rent or anything in my life thanks to my parents who let me stay at their house through my college years. So here I am in my new house jobless..so I cried and called my parents. The next day my uncle called me and said I could come work at Nissan (Yates). He said its not a glorious job but it pays 11.25/hr, you get benefits and even bonuses. I told him to sign me up. All I was thinking about was my house payment and how I really didnt have a choice. So I started Monday. (and yes I am getting to Tim)
I wont go into all the details about my first days at Nissan but I will say I never thought I would graduate college and go work in a plant where I had to wear safety glasses (yes, i said safety glasses. side story-- i always got in trouble for not wearing mine. I was embarrassed. Who the f*ck wants to wear safety glasses all day? Especially someone that has been tramatized by glasses all their life!) 24/7 and get dirty on a daily basis. I did come home and cry by the way. It was a rude awakening for me for sure. I thought I was too good to work in a plant and thank goodness I was put in my place. Again, I didnt have a choice. Now I will tell you my modivation for coming into work. I saw this boy and for some reason knew I would have him. I even started rolling my hair and putting on makeup so he would notice me. (idiot) Needless to say he did notice me. I mean how could you not. 1. I was the new girl 2. I was cute (and skinny at that time) 3. I was nice, nice all the time. One day my supervisor made me work for Tim. My first words to him were. Are you married..no How old are you... 21. (I was 23, I thought he was like 27.. I found a baby) I didnt do any of the work for him. He tried to tell me how to do a job and I wasnt listening. Just staring. After our encounter I thought it was smart to leave notes on his truck. (like a teenager). He didnt call, maybe that was b/c he was engaged to be married. YUP that will do it. He didnt tell me that, a co-worker did. For some reason it didnt matter. He stopped me one day and said he would call me that night. to shrink the story. He called, broke off the engagement, fell in love with me (I fell in love with him the day I saw him) and he moved in. We got engaged after 9 months. The proposal was so special. He got down on one knee while we were watching Emerill Live and proposed. I let Stacy(my BF and roommate) know first seeing as though she was just in the other room. We got married Nov 12, 2005 and I can honestly say I am one of the luckiest girls in the world. A few things about my Timmy.
1. He is 6'5. This is awesome for a big-boned (as my family says) girl. He makes me look small
2. He wears a knife in his pocket daily. A little redneck maybe but he uses it at work daily and he also likes to make a slit in his beer can for some dumb reason. He says it tastes better but I think it is just an excuse to show everyone he has a knife.
3. He rubs my feet a few times a week and will brush my hair if I ask. (I love that)
4. He tells me he loves me like 100 times a day
5. He sings rap songs and dances when no one is looking
6. He is my world
Thats our story in a nutshell. Its also the story of how I started working at Nissan. I have been here for 4.5 years and I actually now work in a office and get to ride a little yellow golf cart around the plant and look for parts. I love it. Who would have thought. I also get to work with Tim daily. He works right outside my office. We get to carpool and everything. Most people wonder how we can be around each other so much but we love it. We can't get away from each other. Nissan is full of cheaters. It happens and sometimes its b/c you get close to people you are around 8-10 hours a day. I am not saying it is an excuse for people to cheat, I am just saying it happens. So basically I am lucky to get the pleasure to be around my husband literally 24/hrs a day.
